Here's my favorite Hungarian
recipe

Hungarian Lecho



 

There are a few versions of the recipe that I’ve seen on the internet,
but this is the way I was taught.

We always make enough to share with family and friends.  Hope you like it.

4 pounds of Hungarian Smoked Garlic Sausage.  Very Important!

Pre Heat the oven to 350 deg.
 Cook the Hungarian Garlic Smoked Sausage for 30 minutes.

Let it cool down while you are preparing the vegetables.

We use an electric roaster to combine all the ingredients.
Heat the Roaster to 200 degrees


Add 2 tablespoons of virgin olive oil to the roaster.

Ingredients and directions:

10 Yellow Onions


Cut the ends off, peel the first skin and
slice from top to bottom of onion into thin slices.
Add your onions to the roaster. Stir and cover roaster.

Have a beer, glass of wine, or shot...your preference.

Let the onions simmer 30 minutes (without BURNING)
until everyone in the house smells it.

30 Roma Tomatoes 

Slice thin.  Add to the roaster and stir to mix.

Have a beer, glass of wine, or shot...your preference.

20 Cubanelle Peppers (Sweet, Banana Peppers)

 

Slice one side, remove stem and shake out the seeds.
Then slice thin.  Add to the roaster and stir to mix.

You know,  Have a beer, glass of wine, shot...

Optional - I like to add some whole peppercorns at this point.
I use about 2 tablespoons.
Don’t do it if you don’t like biting into a surprise spice during your meal, but I like it.

Slice the (cooled) Hungarian Garlic Smoked Sausage into to ¼ slices.  Add to the roaster and stir to mix.

6 Hungarian Hot Peppers

 
Slice one side, remove stem and shake out the seeds.  Then slice thin.  Add to the roaster and stir to mix.

Warning: WASH YOUR HANDS THOROUGHLY!!!  If you don’t, you’ll figure out eventually why I added the warning.

Go ahead and toast to your hard work!

Cook in the roaster for 2 hours at 350deg. and stir every half hour.

Taste the sauce and add salt (I use Kosher or sea salt) a little at a time, and fresh ground pepper.

Cook in the roaster for 3 additional hours and stir every half hour.
Go ahead and taste the sauce every half hour!

Total cooking time is about 6 hours, but you can bring the temp down to 200deg. to simmer until you have the texture of all the vegetables you desire.

At this point, if the sauce is not hot enough for you, I would suggest using some

Hot Hungarian Paprika (be careful Hot Hungarian Paprika is HOT!).

Update Windows & your virus scanner.
If you have a less than legal copy of Windows, you probably are not up to date.
At some point Microsoft cuts off your Windows updates.
Even if you "made it legal" at some point, "Windows Genuine Advantage Validation" probably caught onto your trickery and stopped the update downloads.
Make Your Microsoft Windows legal!
This is the most important step.
You need to do this ASAP and then do ALL of the Windows updates.

If you have Windows update on automatic update and
your virius scanner on automatic update you should be fine.
Still, go do it now.
If you have trouble downloading the updates, here's an alternate source.

Also download the Microsoft Windows Malicious Software Removal Tool
and run it.  As far as I know, it will find and remove the Conficker worm.

Update your virus scanner & spyware scanner
  You should be doing this all the time anyway.
 If you don't have these scanners or don't like the current ones you are using,
here are some freebies I like.

Install them.  Update them, and do a quick scan with each.
if they find anything other than cookies,
rerun the program, but this time do a full scan.

If it turns out you are infected with the Conficker worm,
Symantec-Norton  anti-virus has directions on how to clean your system
and free removal tools.  Even if you used the Windows tool above.
If I were you, I'd check out Symantec-Norton's too!

While I'm at it, do yourself a favor and download "Crap Cleaner".
When you have done everything I mentioned above, install "Crap Cleaner"
Run both the cleaner and registry fixer.
It's not a virus, spyware scanner but it will clean, optimize, and
WILL make your computer run faster.

It all souds like a lot of work and a pain in the butt.
But, following the instructions above will make your computer run like new!

All programs are free.
Make sure you keep these programs updated!
